1 Sauté the onion in some butter or oil over a medium-high heat for about 2 minutes. Add the chilies and red pepper and sauté for another 2 minutes. Add the garlic and continue to cook until everything is lightly caramelized, about 5 minutes.

2 In a separate pan, brown the ground mystery meat. Try not to break it up too much while browning if you want bigger pieces of meat in the chili. After it’s done browning, drain the excess fat, if necessary.

3 Add the meat to the onions and peppers and mix together.

4 Transfer everything to a stock pot or Dutch oven with all the remaining ingredients and stir together over a high heat for 5 minutes, or until it starts to bubble.

5 Reduce the heat to low and simmer the chili, uncovered, for around 2 hours. Stir and taste periodically to see if you want to add more spices. Chili tends to burn and harden on the base of the pot, so it’s good to scrape the bottom with a wooden spoon occasionally.

6 Serve with your favorite chili fixin’s.
