1 In one of the small mixing bowls, add the flour, herbs and salt (A).

2 Mix everything together thoroughly with your fingers and set aside. This is the dry mixture (B).

3 Weigh out the warm water in the measuring jug/pitcher and transfer ¾ of it into your large mixing bowl.

4 Weigh out the yeast and add it to the second small mixing bowl. Then add it to the water. If you’re using dried/active dry yeast, you’ll need to soak it for around 10 minutes or until it floats to the top and starts to bubble slightly. If you’re using fresh yeast, dissolve it in warm water with your hands. If you’re using instant/quick dry yeast or fast-acting yeast, see page 19. This is the wet mixture.

5 Add the dry mixture to the wet mixture and stir it slowly with your hands until it comes together (C). If it doesn’t come together and it seems a bit dry, add a little of the remaining water. At this point the dough be slightly sticky.

6 Use the plastic scraper to scape the sides of the bowl clean.
