Sauvignon Blanc

Sauvignon blanc is a white grape that is native to the Loire and Bordeaux (where it is usually blended with semillon, another grape). It’s widely planted in the western United States, South America, Australia, and New Zealand. In fact, it put California on the wine map, where it is often known and labeled fumé blanc. While the chardonnay’s styles are based on the taste, sauvignon blanc’s styles depend on how much the grapes are shaded and whether it is aged in oak.

The varietal identity of sauvignon blanc is typically similar to grass, bell pepper, or grapefruit. However, often it picks up an aggressive “catbox” or “gym sock” odor when the grapes lack sun exposure or are harvested too soon.

Bartender Knowledge

Shaded grapes tend to produce a wine that is slightly green tinged with a grassy flavor, while grapes that have been exposed to sunlight have a citrus flavor and melonlike aroma.
