2 teaspoons baking powder

1/2 cup breadcrumbs

1/2 teaspoon baking soda

3 tablespoons brown sugar

1/2 teaspoon salt

2 eggs

2 cups buttermilk

3 tablespoons vegetable oil

4 blueberries

2 cups sliced fresh strawberries

Instructions

Mix a tablespoon of brown sugar, salt, baking soda, baking powder, breadcrumbs and flour in a large bowl.

Whisk the buttermilk, oil, and eggs in another bowl.

Fold the flour mixture into the buttermilk mixture.

Add a quarter cup of pancakes in batches on a nonstick skillet on medium heat.

Cook until both sides turn golden brown.

Mash a cup of strawberries with the remaining brown sugar, then stir in the remaining cup of strawberries.

Leave to stand until the strawberries release their juices.

Layer pancakes with strawberry sauce and top with blueberries.
