BEEF CARPACCIO SALAD WITH THAI LEMONGRASS & CHILLI OIL DRESSING

Sweet, sour, salty and hot – this fragrant Thai dressing ticks all the right boxes, and rather than masking the earthy flavours of the raw beef, it lifts and complements them. It’s a good idea to put the beef in the freezer first to firm up as this will make it so much easier to slice thinly and the other tip is to use a long-bladed, very sharp knife. Choose a thick piece of beef, preferably a centre cut, to allow you to cut slices of a decent size.

SERVES 4 PREPARATION TIME: 15 MINUTES, PLUS FREEZING

200g/7oz piece good-quality sirloin steak

2 handfuls of baby spinach leaves

1 carrot, thinly sliced into thin strips

5cm/2in piece cucumber, quartered lengthways, deseeded and cut into thin strips

1 small red pepper, deseeded and cut into thin strips

¼ small red onion, very thinly sliced

1 small handful of basil, leaves roughly torn

1 small handful of coriander, leaves roughly chopped

DRESSING:

3 tbsp thai Lemongrass & chilli oil (see page 108)

2 tbsp fish sauce

juice of 1 lime

1 tsp caster sugar

sea salt and freshly ground black pepper
