Meatloaf: The one word that can make some people shudder, make some people run from the dinner table, and, for true “meatloafobic” people, cause projectile vomiting in the dining room. Yep, I used to be one of those people, but now, depending on the meatloaf, I will be the first one to sit down at the table.

In this section on Blue Plate Specials, I will be sharing with you some of my favorite meatloaf recipes. Meatloaf, as we know it, is truly American (albeit the idea is French in origin, and it is technically a pâté) and has been a staple in diners, truck stops, cafés, and roadside eateries since the first flame met a burner. They are a humble dish and, when prepared properly, quite delicious, and the leftovers make for one of the best sandwiches in the known world.

This meatloaf has a combination of ground beef and ground pork, thus it will be rather moist and rich in flavor. Aside from the freshness of the vegetables within the meatloaf, it also has the added flavor of having barbecue sauce baked atop it during its final stage in the oven. A point to remember when cooking a meatloaf: it is very natural for them to shrink during the cooking process.
