BANANA-DATE TEA CAKE

The texture and flavor of dates go wonderfully with banana in this moist tea cake, with its delicate buttery crumb. This versatile recipe takes well to a number of additions; dark chocolate chips go particularly well with the date/banana/walnut combination, or try using peanuts or pecans.

KITCHEN NOTES: Use very ripe bananas in this recipe. I keep a resealable plastic bag of bruised and too-soft-for-eating bananas in my freezer, so there is never a wasted piece of fruit.
