Mamie's Marble Cookies

Wife of 34th President Dwight Eisenhower, Mamie is a true homemaker in every sense of the word. Here, former First Lady Mamie Eisenhower's sweet and nutty marble cookies get a modern makeover.

Ingredients:

12 ounces semi-sweet chocolate chips

2 cups pecans (chopped)

2 cups unsalted butter

1 ⅓ cups sugar

2 tsp vanilla extract

4 cups flour

½ tsp salt

48 pecan halves

Sugar (as needed, to sprinkle)

Directions:

Preheat the main oven to 375 degrees F.

In the microwave, on 30% power, melt the chocolate chips for 1-2 minutes.

Stir in the chopped pecans, and put to one side.

In a bowl, beat the butter until smooth. A little at a time, add the sugar, beating until fluffy. Add the vanilla extract, and beat to combine.

In a second bowl, stir the flour with the salt.

Gradually add the flour mixture to the butter mixture.

In 3 additions, add the melted chocolate-nut mixture, using a metal fork, streak it through the batter to create a marbled effect.

Scoop the dough onto ungreased baking sheets.

Press 1 pecan half into the middle of each cookie. Sprinkle the surface of the cookies with a dusting of sugar.

Bake the cookies in the preheated oven for 14-16 minutes, or until they begin to brown around their edges.

Remove from the oven and allow to cool on a wire baking rack.

Serve and enjoy.
