15 – Shallots & Onion Dip
This recipe mixes the delicious taste of shallots with the tang of onion dip. It’s a great appetizer to serve on Super Bowl Sunday.
Makes 3 cups
Cooking + Prep Time: 1 & 1/2 hours
Ingredients:
4 tbsp. of oil, olive
3 chopped large onions, sweet
Salt, kosher
Pepper, ground
2 thin-ring-sliced shallots
1 x 15-oz. container of sour cream, reduced fat
1 tbsp. of chopped chives, fresh
To serve, optional:
Sweet potato chips
Pretzels
Instructions:
1. Heat 2 tbsp. of oil in large-sized skillet on med. heat. Add the onions. Season as desired. Stir occasionally while cooking, till they are deeply golden brown in color, 35-40 minutes.
2. Heat last 2 tbsp. of oil in small pan on med-high. Add shallots. Stir occasionally while cooking till golden brown, three to four minutes. Then, transfer to your plate lined with paper towels and allow to completely cool.
3. Combine onions and sour cream in medium bowl. Season as desired. Top with cooked shallots and then chives. Serve with chips and pretzels.
