Salmon Loaf en Croûte

Here’s my version of an haute cuisine classic from the 1950s, originally a whole sea bass baked in a shell of golden puff pastry. This culinary masterpiece came from the kitchen of Fernand Point, the father of modern French cuisine. His version has the delicate croûte fancifully styled into the form of a fish. In my slightly more humble incarnation, I’ve filled the croûte with a beautiful salmon loaf. The result is super-delicious and spectacular-looking, but deceptively easy if you use store-bought pastry.
