QUICK AND EASY BEEF SLAW

This spicy, meaty salad is based on “crack slaw,” which went viral on the Internet. It is easy to make—maybe even a bit too easy, because it’s addictively delicious. Don’t say I didn’t warn you!

MAKES: 4 SERVINGS | HANDS-ON TIME: 15 MINUTES | OVERALL TIME: 25 MINUTES

2 tablespoons (30 g/1.1 oz) ghee or virgin coconut oil, divided

1.1 pounds (500 g) ground beef

Salt and pepper

1 medium (100 g/3.5 oz) red onion, sliced

2 cloves garlic, minced

1 teaspoon grated fresh ginger

1.3 pounds (600 g) sliced green or white cabbage, or coleslaw mix

1 teaspoon Sriracha or 1/2 teaspoon red pepper flakes

2 tablespoons (30 ml/1 oz) coconut aminos

1 tablespoon (15 ml/0.5 oz) fresh lemon or lime juice

1 tablespoon (15 ml/0.5 oz) toasted sesame oil

Optional: 1 tablespoon (10 g/0.4 oz) erythritol or Swerve, or 3 to 5 drops liquid stevia extract

Heat a large pan greased with 1 tablespoon (15 g/0.5 oz) of the ghee over medium-high heat. Add the ground beef and cook until browned on all sides. Season with salt and pepper to taste, and use a slotted spoon to transfer to a bowl.

Grease the pan in which you cooked the beef with the remaining 1 tablespoon (15 g/0.5 oz) ghee. Add the red onion, garlic, and ginger. Cook until fragrant and lightly browned, about 3 minutes. Add the cabbage and cook until crisp-tender. Finally, add the Sriracha, coconut aminos, lemon juice, sesame oil, and erythritol (if using). Return the ground beef to the pan and heat through while stirring to allow the flavors to combine. Remove from the heat, and season with salt and pepper to taste. Serve, or let the slaw cool and store in the fridge for up to 3 days, or freeze for up to 3 months.
