As manly, beer-guzzling, and meaty a reputation as Chicago has, it may seem surprising that spinach pizzas are a huge hit on most pizzeria menus (Popeye would be proud!). Having tried this pizza with both cooked and uncooked spinach in the filling, the hands-down favorite was to use fresh spinach. Make sure you dry the spinach well before using. We prefer to buy the triple-washed baby spinach in plastic bags, because it saves time and the spinach is crisp and dry and has a small tender portion of the stem attached.
