butterscotch cream quince pie
Raw quince is quite harsh and tannic, but poaching it in a sweet, spiced sugar syrup transforms it into a delicate treat. Here, the tender slices with a buttery texture are paired with whipped cream and butterscotch sauce in a spicy gingersnap crust. The fruit is shaped, and therefore peeled and cored, rather like an apple, although the quince is harder, with a knobby, uneven surface, so be especially careful with the knife.
Makes one 9-inch pie
