Tomato and Goat Cheese Tart
At the end of the summer, if Iâve had a good crop of tomatoes, I freeze my surplus, anticipating this tart. I remove the leaves and stems, wash the tomatoes, and place them whole (some people prefer to remove the seeds and skin) in sealable plastic bags. When I make this tart in the dead of winter with the last of the summer tomatoes, it reminds me of eating outdoors in our wild little yard, and the kids throwing a baseball precariously close to my head.
