Financiers are among the most classic of French cookies. They have a soft, delicate consistency that is almost cake-like, and are usually made with browned butter and nuts, which gives them their name, since those were at one time luxury ingredients. You’ll often find them on a plate of mignardises, the little treats brought with coffee or the bill in high-end restaurants in both France and the United States, but in truth they are among the easiest cookies to make. Everything goes into one bowl, chills overnight so that the flour can relax, and the next day you just have to bake them. Financier molds, often made out of silicone, are available in kitchenware stores and online (see Resources). The classic shape is rectangular, but you’ll find more and more round financiers because they stay moister and are thicker in that shape. Because the following pages include several financier recipes, buying a financier mold would be a worthy investment. You can also use a mini muffin pan lined with paper baking cups; those financiers will be a bit larger, so you might get fewer cookies out of the recipes, but they will be just as delicious.
