STOCKYARDS

Chicago was a meat-packing center from the 1860s. Livestock brought by train from the West were killed and the meat sent on to cities on the East Coast.

In Argentina, millions of cattle were killed for their hides and the meat was left to rot. The invention of refrigeration and canning meant that beef could be preserved (corned beef) and shipped around the world.

In the United States, a cattle industry grew up around the cowboys and railheads of Texas and the Great Plains. Beef was shipped by train to the growing cities of the eastern seaboard. Fresh meat became far more affordable than it had been in the past.
