Marshmallow pops

‘Cake pops’ – gorgeous little balls of cake, covered in chocolate and stuck on a lolly stick – have become something of a baking phenomenon of late. But it’s not just cake that can get this oh-so-cute treatment. Marshmallows are perfect for making ‘pops’ too. Once you know how to make them, the decorating options are almost limitless, so they are ideal for parties and celebrations at any time of year.

You start with a ball of marshmallow. The easiest way to achieve a perfect sphere is to invest in a silicon ‘pop’ mould; these come in two halves that you fill with mixture then press together. They are readily and cheaply available from kitchen shops and online. You will also need lollypop sticks, which again are easily found.

White or dark chocolate makes a perfect coating, but if you want brighter colours, seek out ‘candy melts’, which are chocolate-like buttons that come in myriad colours. Easy to buy if you live in the States, but not so easy to get hold of in the UK. Try searching online. I have tried dyeing white chocolate with food colourings but with mixed results – more often than not, the chocolate becomes very thick and undippable. Since marshmallows are sticky, you can also dip the pops directly in dry sprinkles, such as desiccated coconut or sugar strands. Makes 20 pops.
