2 To make the cheese mixture, melt the butter and leave to cool slightly. Whisk together the double cream cheese, low-fat quark and blancmange powder. Add the butter in a thin trickle and combine well.

3 Separate the eggs. Whisk the egg whites and salt until stiff. Whisk the egg yolks and sugar until light and fluffy. Combine the quark mixture and the egg yolk mixture. Fold in the whisked egg white. Arrange the quark mixture over the chocolate shell. Shred the remainder of the pastry with your fingers and sprinkle over the quark mixture.
