Apple Flapjacks with Pumpkin Seeds

This quick and easy recipe makes a fantastic treat for pesky Halloween trick-or-treaters, and is a great addition to a lunchbox at any time. Every year around Halloween, our shop in Borough Market helps to celebrate the market’s Apple Festival. These apple flapjacks, with their wonderful chewy texture combined with the healthy bite of pumpkin seeds, are one of the recipes with which we celebrate.

Makes 12

1 large Bramley apple (about 200g)

¼ tsp ground cloves

200g unsalted butter

100g golden syrup

50g honey

90g light soft brown sugar

250g jumbo oats

125g porridge oats

3 tbsp pumpkin seeds

Heat the oven to 180°C/Gas Mark 4. Line a 20cm × 34cm baking tray with baking parchment.

Peel and core the apple, cut it into small cubes (about 8mm) and sprinkle with the ground cloves.

Put the butter, syrup, honey and sugar into a large pan and slowly bring to boiling point. Once it starts to bubble, simmer on a low heat for 30 seconds. Remove from the heat and add the oats and apple. Stir all the ingredients together with a spatula but be careful not to over-mix, as this will lead to a tougher texture.

Spread the mixture out in the lined baking tray and press flat with the back of a spoon. Sprinkle the pumpkin seeds on top.

Bake for 25–30 minutes, until golden brown. Remove from the oven and leave to cool. Chill for 1 hour before cutting into 12 squares or bars or, as we did in the picture shown below, into rounds using a straight-sided 5cm cutter. Believe you me, the leftover trimmings are just as delicious.
