ORANGE AND LEMON BISCUITS

Very pretty for a special occasion, these biscuits are for people who like sweet things.

140 g/4½ oz/1 stick + 1 US tbsp margarine

140 g/4½ oz/½ cup sugar

250 g/9 oz/2¼ cups white (all-purpose) flour

grated rind of 1 orange

grated rind of ½ lemon

2 eggs, beaten

orange juice, icing (confectioners’) sugar, candied peel

Beat the margarine and sugar to a cream. Add the flour and the orange and lemon rind. Mix well and add the lightly-beaten eggs. Knead lightly until the dough is soft and elastic. Roll out the dough to ½ cm/¼” thick on a floured board. Cut into small rounds. Bake at 200°C/400°F/gas 6 for 15–20 minutes. Allow the biscuits to harden, then put them on a wire rack. Make a thick syrup with the orange juice and icing/confectioners’ sugar and spread it on the biscuits when they are cold. Scatter a little candied peel over the icing while it is still soft.
