½ cup frozen concentrated apple juice, thawed

1 tablespoon lemon juice

1 tablespoon cornstarch

¼ teaspoon cinnamon

1 medium apple, thinly sliced

2 tablespoons lemon juice

In a small heavy saucepan, stir together apple juice concentrate, 1 tablespoon lemon juice, cornstarch, and cinnamon. Cook and stir over low heat until thickened and bubbly. Cook and stir 2 minutes more. Pour warm topping over cake. Toss together apple slices and lemon juice. Arrange on top of cheesecake. Chill until serving time.
