Butter Brown Cake

Try adding in a little peppermint extract. Makes 3 cakes

Ingredients:

• 3 eggs

• 3/4 tsp baking powder

• 2 ½ tbsp butter, at room temperature

• 3 ½ tbsp butter, browned and cooled

• 1/4 cup brown sugar

• 3 ½ tbsp packed brown sugar

• 1/3 cup + 3 tbsp buttermilk

• 1/4 cup + 2 tbsp grapeseed oil

• 1/2 tsp clear vanilla extract

• 1 cup all-purpose flour

Instructions:

Preheat oven to oven to 350.

Whisk together flour and baking powder.

In pot on medium high heat, brown 2 ounces of butter.

In stand mixer, mix brown butter and whole butter, and sugars and mix 3-4 minutes.

Beat in eggs one at a time.

Add in buttermilk, oil, and extract and let go 8-9 minutes, until silky smooth.

Add in flour mixture and let go 2 minutes.

Spread on baking sheet evenly into a thin layer and bake 33-35 minutes.
