300g (10½oz) gluten-free ginger biscuits (cookies)

100g (½ cup minus 1 tbsp) butter, melted

3 large egg yolks

1 x 397g (14oz) can of condensed milk

Grated zest and juice of 4 limes, plus extra zest to finish

To finish

300ml (1¼ cups) double (heavy) cream

2 tbsp icing (confectioners’) sugar, sifted

A good key lime pie is never a bad idea, but a gluten-free key lime pie is always a good idea. Say hello to three layers of pure joy: a buttery, gluten-free biscuit base, topped with sweet, rich filling with lots of lime-y kick to it, adorned with fluffy whipped cream. If I could only eat one dessert for all eternity, I’d be just fine with this one, thank you very much.
