Instructions

Preheat the oven to 350 degrees Fahrenheit.

In a large Dutch oven, add the olive oil and sliced bacon.

Cook the bacon over medium heat for 8 minutes, then remove from the pot and place on a plate to the side.

Pat the chicken thighs and drumsticks dry, then season with 1 teaspoon of salt and pepper.

Add a splash of the red wine to deglaze the pot, then add the seasoned chicken thighs and drumsticks.

Cook the chicken for about 10 minutes, or until lightly golden and no longer pink.

Remove the chicken from the pot, and add another splash of red wine to deglaze again.

Next, add the diced onion and sweat for 5 minutes on medium heat until translucent before adding the minced garlic and carrots.

Add the rest of the salt and pepper to the vegetables, and cook for 10 minutes until the carrots are tender.

Pour in the rest of the wine, then add the chicken broth and fresh thyme.

Place the bacon and chicken back in the pot and allow to simmer for 10 minutes.

Then, add the sliced butter, cherry tomatoes, and mushrooms to the pot.

Cover with the lid and cook in the oven for 30 minutes.

Garnish with fresh parley, serve over mashed potatoes or polenta, and enjoy!
