Dark brown sugar gives this country cake a delicious butterscotch flavor.

2 cups all-purpose flour
¾ teaspoon salt
½ teaspoon baking powder
½ teaspoon baking soda
10 tablespoons butter or margarine, softened
1 cup packed dark brown sugar
⅓ cup granulated sugar
2 large eggs
1 tablespoon vanilla extract
¾ cup whole milk
1 Preheat oven to 325°F. Grease 10-cup fluted baking pan or decorative 9- to 10-cup metal loaf pan; dust pan with flour.
2 On waxed paper, combine flour, salt, baking powder, and baking soda; set aside.
3 In large bowl, with mixer on low speed, beat butter and sugars until blended, frequently scraping bowl with rubber spatula. Increase speed to medium-high; beat until creamy, about 3 minutes, occasionally scraping bowl.
4 Reduce speed to low; add eggs, one at a time, beating well after each. Beat in vanilla. Alternately add flour mixture and milk, beginning and ending with flour; beat just until smooth.
5 Spread batter evenly into prepared pan. Bake until toothpick inserted in center of cake comes out clean, 50 to 60 minutes.
6 Cool cake in pan on wire rack 15 minutes. With small metal spatula, loosen cake from side of pan and invert onto wire rack to cool completely.
