1 cup dried chickpeas, soaked overnight covered with 2 inches water and then drained (or pressure cooker alternative; see headnote)
1 medium-size yellow onion, peeled and chopped roughly
5 cloves garlic, smashed and peeled
1 teaspoon kosher salt
¼ teaspoon Mexican chili powder, or to taste
2 teaspoons ground cumin
1 teaspoon baking powder
1 tablespoon sesame tahini (optional)
6 tablespoons (54 g) high-quality all-purpose gluten-free flour
¼ cup roughly chopped fresh parsley leaves
¼ cup roughly chopped fresh cilantro leaves
Extra-virgin olive oil, as needed
Yeast-Free Pita Bread, for serving (page 57)
Hummus, for serving
1. Preheat your oven to 400°F. Line a rimmed baking sheet with unbleached parchment paper and set it aside.
2. In the bowl of your food processor fitted with the steel blade, place the chickpeas and pulse them a few times until chopped but not pureed. Add the onion, garlic, salt, chili powder, cumin, baking powder, and the tahini (if using), and pulse until well blended. Add the flour, parsley, and cilantro, and pulse a few times until the mixture starts to clump together.
3. Turn on the food processor. Drizzle in olive oil very slowly only until the mixture begins to come together in a ball. Turn out the dough onto a lightly floured piece of unbleached parchment paper and press together.
4. With wet hands, divide the dough into twenty-four pieces and roll each tightly into a ball. Place about 1 inch apart on the prepared baking sheet, then drizzle each ball liberally with olive oil to ensure browning in the oven. Place the baking sheet in the freezer for about 10 minutes, or until the balls are firm.
5. If making pita bread, begin to make the dough.
6. Place the baking sheet with the falafel in the preheated oven and bake until lightly golden brown on the top and browned on the underside, about 15 minutes. Finish making the pita bread dough.
7. When the falafel is done baking, remove from the oven. Place the pita bread dough in the oven and bake according to the recipe directions. Serve the falafel in the pita, with hummus.
