PIPING LETTERS

1 Position the pastry bag at a 45° angle, touching the surface. Squeeze icing while lifting the bag just above the surface.

2 Continue with steady pressure and pipe the letter. Let the icing flow from the bag naturally just above surface. Do not drag the tip on the cake.

3 Touch surface and stop squeezing.

PERFECT PENMANSHIP

* The icing can be thinned slightly with a few drops of water.

* On a freshly covered fondant cake, or after the buttercream has crusted, use a ruler and toothpick to mark dots on the icing to make a straight line to follow.

* Practice on a sheet of parchment paper to know how much area the message needs.
