There are different types of seed-sprouting kits available, but the easiest (and cheapest) of them all is a simple glass jar. Wash the jar thoroughly with plenty of hot, soapy water; rinse well, giving it a final rinse with boiling water. Rinse the seeds thoroughly; then cover the bottom of the jar with a thin layer. A 1-quart (450g) jar takes about a tablespoon of seeds, but this varies according to their variety. Cover the seeds with water. Make a strainer by cutting a piece of cheesecloth to fit the top of the jar, and hold it in place with a rubber band. Let the seeds soak for about eight hours or overnight. Strain off the soaking water, and rinse and drain twice daily until the seeds have sprouted sufficiently for you to eat.

Most store-bought sprouting kits consist of stacking, slatted plastic trays. These are good for growing several varieties of sprouts in a compact space. However, harvesting them can be difficult because the roots grow through the slats, making the trays awkward to clean.
