Bok Choy and Ginger Salmon

Bok Choy is Chinese cabbage with a semi-firm texture and slight tartness which is ideal for sweet and sour Asian dishes. If you are tired of ordinary lemony salmon and herbs, try this recipe.

Servings: 4

Cooking Time: 15 minutes

Ingredients:

● 4 skinless and boneless salmon fillets

● 1 large bok choy head, trimmed and cut in half lengthwise

● 1 tbsp fresh ginger, peeled and grated

● 3 tbsp light soy sauce

● 1 tsp honey

● 1 tbsp rice vinegar

● 1 tbsp sesame oil

Directions:

Combine all the ingredients except for the salmon in a bowl and stir well. Add the salmon fillets and toss to coat with the marinade. Keep in the fridge for 30 minutes.

Meanwhile, preheat your oven at 400F/200C. Line a large shallow sheet pan with parchment paper and place the bok choy and the salmon fillets with the marinade drizzle on top.

Bake for 15 minutes and serve right away.
