Overall, it has been demonstrated that carcass decontamination interventions are very useful because they contribute to the production of carcasses with lower levels of contamination and to a reduction in the prevalence of enteric pathogens. However, further studies are required on possible additional consequences of decontamination treatments related to food safety. Indeed, recent studies in our laboratory have shown that exposure of pathogens to conditions similar to those occurring during decontamination may result in development of acid-adaptation responses, while various other studies have found that stress-adapted pathogens may show increased resistance to the conditions of the gastrointestinal environment and possibly increased pathogenesis. In addition, further investigation is required of the effect of decontamination treatments on the backround microflora of meat that may act antagonistically to the growth of pathogenic bacteria during product storage.
