Sunday Morning Empanadas
Ingredients
1/2 C. all-purpose flour
1/2 C. whole wheat flour
1/2 C. soy flour
1/3 C. vegetable shortening
6 tbsp. ice water
1 tbsp. apple cider vinegar
4 eggs
1/2 C. Baby Spinach
2 tsp. curry powder
2 tsp. paprika
1 tsp. salt
Directions
Set your oven to 400 degrees F before doing anything else and grease a baking sheet.
For the dough: in a bowl, add the all-purpose flour, vinegar and water and mix until well combined.
Add the remaining ingredients and with a pastry cutter, mix until a dough forms.
Make 2 disks from the dough.
With a plastic wrap, cover the dough and refrigerate for about 1 hour.
For the filling: in a lightly greased pan, add the eggs and cook until scrambled.
Stir in the spices and spinach and cook until just wilted.
Place the dough onto a lightly floured surface and roll into an even thickness.
Now, cut the dough into circles.
Place 1-2 tbsp. of onto the center of each dough circle.
Fold the dough over the filling and press the edges to seal.
In the bottom of the prepared baking sheet, arrange the empanadas.
Cook in the oven for about 15 minutes.
Enjoy warm.
