ORANGE CHICKEN

Ingredients:

• 1 lb. skinless chicken thighs or chicken breasts

• 1 orange

• ½ c. teriyaki sauce

• 1 minced jalapeno

• 3 tbsps. sifted cornstarch

Instructions: 1) Dice chicken thighs or chicken breasts into 1-inch pieces. Put diced chicken in a reusable Ziplock bag or a rectangular plastic container with cornstarch. Shake until all the pieces of chicken are coated with cornstarch.

2) Grate orange until you have 2 tbsp. orange zest. Squeeze the same orange and use ¼ c. of its juice. Mix together orange juice, orange zest, minced Jalapeno and teriyaki sauce in a bowl.

3) Put a pan in low heat and add vegetable oil. Fry chicken until golden brown. Make sure not to overcrowd the pan. You can opt fry it in small batches, and then just them all back.

4) Add the orange chicken sauce into the chicken and allow to simmer until it thickens. Best served with rice. Optional: Top with chopped onion leeks for garnish. Serve immediately.
