Pears Salad

This salad is just the best!

Prep Time: 10 minutes

Total Cooking Time: 10 minutes

Serving Size: 4

Ingredient List:

3 big Asian pears, cored and cut with a spiralizer

¾ cup pomegranate seeds

5 ounces arugula

¾ cup walnuts, roughly chopped

For the vinaigrette:

1 tbsp. sesame oil

1 tbsp. olive oil

1 tbsp. maple syrup

1 tsp. white sesame seeds

2 tbsp. apple cider vinegar

1 tbsp. soy sauce

1 garlic clove, minced

A pinch of sea salt

Black pepper to the taste

Instructions:

1. In a bowl, mix sesame oil with olive oil, maple syrup, sesame seeds, vinegar, garlic, soy sauce, salt and pepper and whisk very well.

2. In a salad bowl, mix pear noodles with arugula, walnuts and pomegranate seeds.

3. Add vinaigrette, toss to coat well and serve right away for breakfast. Enjoy!
