For the filling:

1 cup coconut

1/2 cup chopped pecans

6 ounces cream cheese

1/8 teaspoon salt

1 cup chocolate chips

1 egg

1/3 cup sugar

Instructions:

Preheat the oven to 350 degrees. Line a muffin tin with liners or spray muffin cups with oil.

Combine the sugar, oil, vanilla, water and egg together with a whisk.

Mix the dry ingredients together with a whisk in another bowl. Add the wet ingredients to the dry ingredients and beat for 3 minutes with an electric mixer.

In another bowl, combine the filling ingredients until very well blended – can usually do with a fork.

Fill the muffin tins 2/3 full with the batter; drop a teaspoonful of the filling in the center of each cupcake and push it down until the batter covers it.

Bake for 25 minutes or until done. Let cool completely before frosting with canned German Chocolate frosting.
