Meringue

3 T. cornstarch

8 egg whites

1 T. Cream of Tartar

1-3/4 c. sugar

1/3 t. kosher salt

1 T. vanilla

Instructions

Make the crust by mixing the graham cracker crumbs, cinnamon, salt and sugar in a food processor and pulse so it is well mixed. Gradually pour in melted better and pulse a little more until mixed together. Pour this into an 8" pie pan, use a spoon and press this mixture onto the bottom and up the sides of the pan. Bake this at 350° F. for 20 minutes. Remove from heat and allow to thoroughly cool before proceeding.
