Ingredients
Sweet Shortcrust Pastry
100g spreadable butter
75g caster sugar
2 eggs
150g plain flour plus extra for dusting
70g wholemeal flour
Fruit Filling
300g cranberries
2 oranges
2 jars of fruit mince (400g each)
1 cup golden caster sugar
½ cup water
Crumble mixture
100g butter
100g golden caster sugar
200g plain flour
100g wholemeal flour
50g pistachio nuts
Caramel Sauce
50g butter
1 cup brown sugar
300 ml double cream
Serves 6 to 8.
Pastry
Cream the butter and sugar together, then add the egg yolks one at a time and keep beating. Fold in the flours and blend until the mixture folds into a ball. Wrap the ball of dough in plastic wrap and refrigerate for at least half an hour. Preheat oven to 180 degrees.
