Sesame oil is also healthy for you; it’s rich in healthy fats like monounsaturated and polyunsaturated fatty acids and low in saturated fat.

PREP TIME: 5 MINUTES

EQUIPMENT: MEASURING SPOONS AND CUPS

SERVES 1

Juice of 1 lime

1 tablespoon sesame oil

1 tablespoon olive oil

1 tablespoon honey

1 cup cooked, shredded chicken

⅓ cup frozen edamame, thawed

⅓ cup shredded carrots

1 teaspoon sesame seeds

1. In a large bowl, whisk together the lime juice, sesame oil, olive oil, and honey.

2. Add the chicken, edamame, carrots, and sesame seeds to the bowl.

3. Toss to evenly coat and serve.

MAKE IT VEGETARIAN: As an alternative to chicken, use seitan instead. Simply pan fry bite-size chunks with a tablespoon of soy sauce before adding to the salad .
