TECHNIQUE TIP: It can be hard to temper and work with just a half-pound of chocolate. I recommend tempering at least a pound at a time (454 grams). Once you’re done making the turtles, spread out the remaining chocolate on parchment paper and let it set on a cool kitchen counter. Then store and use this tempered chocolate in a future recipe.
Store up to 2 weeks in an airtight container lined with parchment paper. It’s okay to stack the turtles as long as there is a layer of parchment paper underneath.
