REUSABLE PASTRY BAGS
Reusable pastry bags are somewhat easier to grip, because they are made from textured fabric or canvas, not plastic. They’re also more environmentally friendly and, with proper care, will last for years. I had one bag that came with the kit I got as a teenager that lasted more than 20 years before it finally came apart at the seam. If you’re going to use reusable bags, it’s best to invest in higher-quality fabric ones that are thin and soft and don’t allow oil to seep through.
On the downside, reusable bags require more care. You have to turn them inside out and wash with very hot, soapy water to get all of the greasy residue out of them, which can be messy. They need to be completely dry before storing, and if you use a lot of different colors of frosting, you will need to have several on hand or wash them often. Also, once the end is cut off, you’re locked into the size coupler and piping tips you can use.
DISPOSABLE PASTRY BAGS
By contrast, disposable pastry bags are inexpensive and convenient. They are meant to be used only once and can be tossed at the end of each cake job. They come in large quantities and are especially handy if your cake design requires multiple colors. The same goes for the size of piping tips and couplers, because you can cut them to different sizes based on which tips you’re using. Finally, disposable bags are readily available almost anywhere cake supplies are sold, including local grocery stores and big-box stores.
The biggest downside for disposable bags, other than the environmental impact, is that plastic bags are slick. They can easily slip out of your hand if you’re not careful—especially if you get any frosting on your hands or the outside of the bag. For this reason, I sometimes wrap a paper towel around my bag where I’m gripping it to help me hold it more securely.
With either type of bag, if you’re using standard-size piping tips, you will also need to use a coupler. This is a small, usually plastic adapter that goes into the piping bag and has a ring that screws onto the outside of the bag to hold the piping tip in place. Using a coupler allows you to easily switch out different tips without changing bags. Couplers are not needed for the large piping tips that are used for some cake and cupcake designs because they’re not as easily pushed out of the bag.
