Vanilla-Ginger-Pear Crumble

Prep Time: 20 Minutes • Start to Finish: 1 Hour 20 Minutes

6 servings

Pear Mixture

6 medium slightly ripe, firm Bartlett pears (about 23⁄4 lb), peeled, cut into 1⁄2-inch slices (about 6 cups)

1⁄4 cup granulated sugar

2 tablespoons all-purpose flour

2 teaspoons vanilla

1⁄2 to 3⁄4 teaspoon ground ginger

Topping

1⁄3 cup all-purpose flour

1⁄4 cup packed brown sugar

1⁄4 cup cold butter or margarine, cut into pieces

12 vanilla wafer cookies, crushed (about 1⁄2 cup)

1 Heat oven to 375°F. In large bowl, mix pear mixture ingredients until evenly coated. Spread in ungreased 8-inch square (2-quart) glass baking dish.

2 In same bowl, mix 1⁄3 cup flour and the brown sugar. Cut in butter, using pastry blender (or pulling 2 table knives through mixture in opposite directions), until mixture looks like coarse crumbs. Stir in crushed cookies. Crumble over pears.

3 Bake 50 to 60 minutes or until pears are tender and topping is golden brown.
