198. Buttermilk Chocolate Cake

Servings: 12-16 servings.

Ingredients:

1 cup butter, cubed

1 cup water

2 tbsps. baking cocoa

2 cups all-purpose flour

2 cups sugar

1 tsp. baking powder

1 tsp. baking soda

1/2 tsp. salt

1/2 cup buttermilk

1 tsp. vanilla extract

2 eggs

FROSTING:

3 tbsps. butter

2 tbsps. baking cocoa

3 cups confectioners' sugar

1 tsp. vanilla extract

1/8 tsp. salt

3 to 4 tbsps. milk or heavy whipping cream

Directions:

Boil cocoa, water and butter in a saucepan. Mix together salt, baking soda, baking powder, sugar and flour in a bowl. Put in cocoa mixture and combine nicely. Stir vanilla and buttermilk together; put into batter and blend thoroughly. Whip in eggs. Transfer the mixture into a greased 13x9-inch baking pan. Bake at 350 degrees until a toothpick comes out with no batter streaks, about 23 to 27 minutes. Place on a wire rack to cool down.

Cook and stir cocoa and butter on medium heat until no lumps remain in a small saucepan. Turn off the heat. Mix salt, vanilla and confectioners’ sugar together in a small bowl. Pour in an adequate amount of milk and cocoa mixture to achieve desired consistency of the frosting. Frost the cake.
