Cheese & paprika scones
These scones pack a spicy, cheesy punch. They are fantastic warm, cut in half and slathered in butter. I use a combination of mature Cheddar and Manchego cheese – the Cheddar provides a strong cheese flavour, the Manchego gives creaminess – but you can use up other types of leftover cheese.
The key to great scones is to handle the mixture as little as possible. It should be wet and slightly sticky to ensure a short, crumbly texture and a good rise. A food processor fitted with a blade gives great results. However, you can use your fingers to rub together the dry ingredients and butter.
