Served sweet with butter and honey, savoury with egg, bacon and lard, or simply as a side to mop up gravy, good biscuits are hard to beat. They should be as light as a feather and the trick is to handle the dough as little as possible. If you are a vegetarian, you can use vegetable shortening to make them, but lard makes the very best biscuits. I was given this recipe by my friend Harriet who comes from Tampa, Florida where the biscuits are very good indeed, especially when eaten with some eggs, a side of cheese grits, and a Bloody Mary.
