1 cup pitted dates

1 cup boiling water

1 cup cold water

½ cup labne or Greek yogurt

2 tablespoons silan (date molasses)

2 tablespoons tahini

½ teaspoon orange blossom water

1 cup ice

Put the dates in a heatproof medium bowl, cover with the boiling water, and set aside for 5 minutes to soften. Drain the dates, discarding the water.

Transfer the dates to a blender and add the water, the labne, silan, tahini, and orange blossom water. Blend until smooth.

Add the ice and blend again until smooth and thick. Serve immediately.
