Bacon-Wrapped Loaded Mashed Potatoes
2 tablespoons butter, melted
28 slices bacon (or more)
3 tablespoons barbecue sauce
4 cups leftover mashed potatoes
1 cup grated cheddar cheese
4 scallions, thinly sliced
salt and pepper, to taste
1/2 cup sour cream
Preheat oven to 400 degrees. Prepare a 12-cup Bundt pan by brushing the butter carefully into every crevice.
Line the pan with slices of bacon, slightly overlapping. Use a pastry brush to spread a thin coating of barbecue sauce on the inside of the bacon.
In a large bowl, mix the mashed potatoes, cheese, scallions, salt and pepper, and sour cream together. Carefully scoop the potato mixture into the pan. Fold over any hanging bacon onto the potato mixture.
Bake for 30 minutes, until bacon is cooked completely. Remove from oven and allow to rest for 10 minutes before inverting onto a serving platter. Makes 12–14 servings.
