Exotic Carrot Cake

1 spice cake mix

3 eggs

1/3 cup vegetable oil

1-1/4 cups water

1 cup shredded carrot

1/2 cup chopped walnuts

1/2 cup coconut

1 cup chocolate chips or raisins, optional

1 can (16 ounces) cream cheese frosting

Preheat oven to 350 degrees. Beat cake mix, eggs, oil, water, and shredded carrot together 2 minutes with electric mixer at low speed. Mix nuts, coconut, and chocolate chips or raisins if desired into cake batter. Pour batter into a greased-and-floured 9 x 13-inch pan. Bake 27 to 35 minutes or until an inserted toothpick comes out clean. Remove cake from oven and cool 15 to 20 minutes. Spread cream cheese frosting over top.
