The Three Secrets of Freezing Liquids in Glass:

1. Let hot foods cool before placing in containers.

2. Leave a large amount of headspace—an inch to an inch and a half to leave room for the expansion as the liquid becomes solid. (If you’re nervous you can freeze without the lid and add the lid soon after.)

3. Defrost slowly. I like to thaw the jars in my fridge overnight, but in a pinch I place jars in a saucepan of room temperature water and let sit while I prepare other parts of the recipe. After twenty or thirty minutes I will place the pan on the lowest burner setting on my stove, so it can warm super gradually. Going any faster results in broken glass and shattered dreams.
