SUGAR PLUMS

Recorded at the wedding of King Henry IV of England to Princess Joan of Navarre in 1403, “sugar plums” for centuries referred to an array of candied fruits created by sugar panning. That laborious method made them an expensive commodity. But in the 1860s, producers innovated more cost-effective ways to create them, including rotating pans and steam heat. Still, most Victorian children didn’t have access to the sugary treats prevalent today, so sugar-coated dried fruits on the tree made for a special, tasty tradition. This simple recipe calls for pitted plums preserved in syrup and lots of extra sugar. If you can’t find preserved plums, use any similar fruit, such as apricots or figs, in syrup.
