THESE CHEESY BROCCOLI FRITTERS ARE CONVENIENTLY BAKED IN THE OVEN UNTIL CRISP AND GOLDEN. LEFT TO COOL, THEY MAKE A GREAT SNACK OR AN ADDITION TO A LUNCHBOX, BUT IF SERVING AS PART OF A WEEKDAY MEAL, ROASTED NEW POTATOES AND THE SUPER RED SLAW (SEE PAGE 133) WOULD BOTH MAKE GOOD ACCOMPANIMENTS. YOU COULD USE QUINOA FLAKES INSTEAD OF THE BREADCRUMBS.

Preparation time: 15 minutes

Cooking time: 27 minutes

350g/12oz broccoli, florets and stalks finely chopped

3 spring onions/scallions, finely chopped

60g/2¼oz/1 cup day-old wholegrain breadcrumbs

140g/5oz mature/sharp Cheddar cheese, grated

2 eggs, lightly beaten

freshly ground black pepper

Super Red Slaw (see page 133) and roasted new potatoes, to serve
