DUCK CONFIT WITH WILD MUSHROOMS AND MISO DRESSING

SERVES 4 TO 6

Duck confit can be made up to a week ahead of time and stored in its oil in the refrigerator.

DUCK CONFIT

4 cups plus 1 teaspoon grapeseed oil

10 black peppercorns

4 whole star anise

4 duck legs (about 2 pounds total)

Kosher salt and freshly cracked black pepper

1 head garlic, cut through the equator

2 bay leaves

6 sprigs fresh thyme

1 strip lemon zest

MUSHROOMS

1 pound mixed wild mushrooms (cremini, oyster, chanterelles, shiitake)

Extra-virgin olive oil

Kosher salt and freshly cracked black pepper

MISO DRESSING

2½ tablespoons white miso paste

3 tablespoons seasoned rice vinegar

½ teaspoon light agave syrup

Squeeze of fresh lemon juice

¼ cup grapeseed oil

1 celery heart (4 or 5 inner ribs)

½ cup fresh or frozen cranberries

¼ cup sugar

1 tablespoon fresh lemon juice

2 to 3 tablespoons celery leaves

¼ cup toasted sunflower seeds

Extra-virgin olive oil
